Whole cumin seeds keep their essential oils locked inside until you toast or temper them — that's why they stay fresh much longer than ground. Ground cumin (also called cumin powder) is pre-ground and loses flavor quickly. For tadka and tempering, you need whole seeds. For marinades and spice rubs where you want even distribution, ground works better. Many cooks buy whole and grind as needed for the freshest flavor.
Yes. Jeera is the Hindi word for cumin seeds. If your recipe says jeera, cumin seeds, or whole cumin — this is exactly what it's calling for. Jeera rice, jeera aloo, dal tadka — they all use whole cumin seeds.
The most common method is tempering (tadka): heat oil or ghee, add cumin seeds, and wait until they sizzle and turn slightly darker — about 10–15 seconds. Then add your onions, garlic, or other ingredients. The hot fat carries the cumin flavor through the entire dish. You can also dry-toast them in a pan before grinding for fresh cumin powder, or sprinkle toasted seeds on raita, salads, and yogurt.
No — these are regular cumin seeds (Cuminum cyminum), also called white or brown cumin. Black cumin (kala jeera / shah jeera) is a different species with a smoky, more complex flavor, used mainly in specific North Indian dishes. Caraway seeds look similar but taste completely different — sweeter, more anise-like. Regular cumin is what 95% of Indian, Mexican, and Middle Eastern recipes call for.
