What is tadka / tempering?
Tadka (also called tempering, chaunk, or baghar) is the technique of blooming whole spices in hot oil or ghee. You heat the fat, drop in the spices, wait for them to crackle and release their oils (usually 10–15 seconds), then pour the sizzling mixture over a finished dish — or use it as the starting base for a curry. It's the single most important technique in Indian cooking.
Why whole spices instead of ground?
Whole spices keep their essential oils locked inside until you're ready to use them — that's why they stay fresh for 2+ years. When you drop them in hot oil, those oils release instantly, giving you maximum flavour and aroma. Ground spices lose potency within weeks of grinding. For tadka, you need whole spices — ground won't crackle or bloom the same way.
How do I do a basic tadka with these three?
Heat 2 tablespoons of ghee or oil in a small pan on medium-high. Add ½ teaspoon cumin seeds — wait until they start crackling (5–10 seconds). Add 4–5 whole peppercorns and 2 cloves. Let them sizzle for another 5 seconds. Pour the entire thing — oil, spices, and all — over your cooked dal, rice, or yogurt. That's it. The flavour transformation is instant.
How is this different from the other trios?
The other trios (Byadgi, Kashmiri, Bold Heat, Everyday) are built around ground spices for curry bases. The Tadka Trio is all whole spices — designed for tempering and finishing. Many cooks buy both: a ground trio for the curry base and the Tadka Trio for the finishing pour.
What size are the pouches?
Each pouch is 8oz (225g). Since whole spices are used in small quantities per dish (a few peppercorns, a clove or two, half a teaspoon of cumin), these pouches will last you many months of daily cooking.
Can I grind these spices at home?
Absolutely — that's one of the biggest advantages of buying whole. Toast peppercorns and cumin in a dry pan, then grind in a mortar and pestle or spice grinder. Freshly ground pepper and cumin are night and day compared to pre-ground. Cloves are best used whole or lightly crushed — they're very potent.
