It's the single most important technique in Indian cooking.

Why whole spices instead of ground? +

Whole spices keep their essential oils locked inside until you're ready to use them — that's why they stay fresh for 2+ years. When you drop them in hot oil, those oils release instantly, giving you maximum flavour and aroma. Ground spices lose potency within weeks of grinding. For tadka, you need whole spices — ground won't crackle or bloom the same way.

How do I do a basic tadka with these three? +

Heat 2 tablespoons of ghee or oil in a small pan on medium-high. Add ½ teaspoon cumin seeds — wait until they start crackling (5–10 seconds). Add 4–5 whole peppercorns and 2 cloves.
